Ingredients

  • 1 sheet shortcrust pastry
  • 200 g pitted prunes
  • 60 ml Armagnac or brandy
  • 3 large eggs
  • 300 ml double cream
  • 60 g caster sugar
  • 1 tsp vanilla extract

Method

  1. 01

    Soak the prunes in the Armagnac for at least 30 minutes, or overnight for deeper flavour.

  2. 02

    Preheat the oven to 180C. Line a tart tin with the pastry and blind bake 15 minutes.

  3. 03

    Arrange the soaked prunes over the base of the tart shell.

  4. 04

    Whisk the eggs, cream, sugar and vanilla until smooth.

  5. 05

    Pour the custard over the prunes.

  6. 06

    Bake 30-35 minutes until just set with a slight wobble in the centre.

  7. 07

    Cool to room temperature before slicing.
