Bright, tart and endlessly adaptable - our house lemonade for when the fruit bowl is overflowing.
Warm the water and sugar in a small pan, stirring until the sugar dissolves, then cool to make a simple syrup.
Combine the lemon juice and cooled syrup in a jug.
Fill glasses with ice and pour over the lemon mixture, filling each glass about a third full.
Top up with chilled sparkling water and stir gently.
Garnish with lemon slices and mint before serving.
