Citrus salad with fennel and mint

Sliced oranges and grapefruit with shaved fennel, dressed light and finished with mint.

Citrus salad with fennel and mint

Ingredients

  • 3 oranges
  • 1 grapefruit
  • 1 fennel bulb, very thinly sliced
  • 2 tbsp extra-virgin olive oil
  • 1 tbsp white wine vinegar
  • 1/2 tsp honey
  • Handful of mint leaves, torn
  • Sea salt flakes

Method

  1. 01

    Peel the oranges and grapefruit, then slice into rounds, catching any juice.

  2. 02

    Arrange the citrus slices on a platter and scatter over the sliced fennel.

  3. 03

    Whisk the olive oil, vinegar, honey and any reserved citrus juice.

  4. 04

    Drizzle the dressing over the salad.

  5. 05

    Scatter with torn mint and a pinch of sea salt flakes just before serving.
