The one pie recipe worth memorising - buttery crust, soft cinnamon-spiced apples.
Preheat the oven to 200C. Line a pie dish with one pastry disc.
Toss the apples with sugar, lemon juice, cinnamon and flour.
Pile the apple filling into the pastry case.
Cover with the second pastry disc, seal and crimp the edges, and cut a few steam vents.
Brush with beaten egg and sprinkle with demerara sugar.
Bake 20 minutes at 200C, then reduce to 180C and bake a further 35-40 minutes until deep golden and bubbling.
Cool at least 30 minutes before slicing.
